Panasonic and Pioneer are the names in the plasma market. I personally own a couple Panasonics and they're wonderful; I have one pioneer, and its pretty nice, but I don't have it hooked up to an HD source, so I've never really tested it out - shame on me, I know.
Sharp and Sony are the names in the LCD market. I own one 1080p Sony XBR and one 1080p Sharp. The sharp actually produces my favorite picture out of all the tv's I own. Its got really nice black levels, and for whatever reason, I like the way that colors pop out on it. Ultimately though, the Sony XBR has to be my favorite TV. Its got good picture and black levels, but nothing special to be honest. I just Love the XBR's stylish casing; it totally makes me enjoy the stuff I watch on it more.
I don't really see a ton of room left for DLP's or rear projections in the market. Maybe some niche markets for bargain-hunters and HD aficionados as you mentioned, but those are pretty small market segments.
